Simple Austrian Coffee and Walnut Cake

This cake is so simple to make and tastes really good with a cup of coffee. Surprisingly it is also good with a cup of tea as it complements the flavor of the cake.

I used the house decaf brew from CBTL for this recipe. Why decaf? Because I wanted to finish my pods, however am sure the caffeinated version would taste great too.

This is the recipe I used :

Ingredients

1/2 cup walnuts, 1 and 3/8 cups self raising flour, 1 and 1/2 teaspoon baking powder, 3/4 cup softened unsalted butter, 3/4 cup brown sugar, 2 eggs, 3 tablespoons brewed coffee.

Method

Pre-heat the oven to 180c. Then, toast the walnuts by spreading them on a baking sheet and placing them in the pre-heated oven for around 8 minutes. Remove them and reserve around 5 pieces for decoration. Finely chop the rest and put aside. Then mix the flour and baking powder in a large mixing bowl. Now just add in all the remaining ingredients except for the coffee and the chopped walnuts. Whisk the ingredients until you have a smooth mixture. Then add the coffee and the chopped walnuts. Your mixture should be smooth and slightly thick. If it is too thick you may dilute it with a little more coffee. Put the mixture in a loaf tin and spread evenly. Decorate the top with the reserved walnuts. Bake for 30-45 mins. At around the 30 minute mark or when you notice that the cake and the walnuts are browning, cover the cake with aluminum foil and let it finish baking.

If you want to add some more flavor to the cake you may drizzle it with chocolate sauce. I have tried this version too and it is also delicious, slightly sweeter and more moist. I think roasting the walnuts enhances its flavor and in turn gives us a more flavorful cake. And the best part is my kitchen smelled awesome!
