Orange Cake with Orange Glaze – for the days you wanna bake dessert at the very last minute

It was one of those days that I decided to bake for dessert at the very last minute. It felt like an orange cake kind of day so orange cake it was! This recipe is so incredibly simple that I was able to bake it super fast, while cooking dinner actually. Best part is, it was ready in time for us to decorate and enjoy for dessert.

This orange cake turned out to be so wonderfully moist and packed with flavour. I used the rind of one orange and it gave the cake a pretty light orange colour. I also used almond milk instead of milk and that gave the cake a subtle almond flavour.

This is the recipe I used :

Ingredients

125g butter, softened, 1/4 cup almond milk, 1/4 cup orange juice, 2 eggs, 3/4 cups caster sugar, 1 1/2 cups self-raising flour sifted, 1 tbsp grated orange zest

Method

Combine all the ingredients above and beat thoroughly for 4-5 minutes. Pour into a baking tray and bake in the centre of a preheated oven at 180C for 30-40 mins.

For the glaze

Over the fire, melt 1/4 cup of brown sugar in 1/4 cup of orange juice. Stir until the sugar is dissolved and it becomes a syrup consistency. Once the cake is ready take it out of the oven and set aside to cool. When the cake is cooled pour the glaze over it.

We really enjoyed this cake. It was simply perfect with a glass of white wine. Am sure it is wonderful to have with a cup of tea too! Or coffee. Or hot chocolate.
